A Familiar Chef. A Fresh Beginning.

My name is Mahendra Singh. For more than 40 years, I have had the privilege of building a life around food, service, and the people who make a restaurant feel like home. Many guests in Morris County know me from Cinnamon Restaurant in Morris Plains, where I spent 20 years welcoming families, friends, and loyal customers.

Before that, my journey took me through respected kitchens and hotel groups. Public coverage has traced that journey from Jaipur, where I began cooking and trained in a five-star hotel kitchen, to Indian restaurants in Philadelphia and New York City, six years running my own restaurant in Pittsburgh, then New York City, Edison, and finally Morris Plains. Those years taught me discipline, consistency, and the simple truth that guests remember how you make them feel.

Toby Grill and Bar is my next chapter. It will be a family-friendly neighborhood sports bar with home-style cooking, a warm dining room, and a menu made for regulars: soups, salads, appetizers, rice bowls, pasta, burgers, pizza, seafood, and comfort dishes that bring people together.

To every customer, friend, and member of the community who has supported me over the last 20 years: thank you from the bottom of my heart. I am truly grateful for the opportunity to serve you, and I look forward to welcoming you again soon.

A Note to Our Guests

Chef Mahendra Singh previously owned Cinnamon Restaurant at 2920 Route 10 West, Morris Plains, New Jersey 07950. He operated that business for 20 years before selling it on December 31, 2024, and later remained with the company during a transition period.

Chef Mahendra officially resigned on December 19, 2025 and is no longer associated with Cinnamon Restaurant in any capacity. Any current operations, products, services, or customer experiences at Cinnamon are the responsibility of its current owners and operators.
